At our table, "spicy" isn't just about heat—it's about the complex layers of cumin, coriander, turmeric, and cardamom. We’ve designed this guide to help you navigate the vibrant spectrum of Indian flavors, from the creamy coasts of the South to the fiery kitchens of the North.

🌶️ Level 1: Mild (The Aromatic Path)

  • The Profile: Focused on "Thanda" (cool) spices. You’ll taste the sweetness of coconut, the richness of cashews, and the scent of green cardamom.

  • The Heat: Barely there. Perfect for children or those who prefer a soothing meal.

  • Classic Dishes: Vegetable Navratan Korma, Butter Chicken (Murgh Makhani), or Malai Kofta.

🌶️🌶️ Level 2: Medium (The Balanced Classic)

  • The Profile: This is the standard "Indian Home" heat level. It features a gentle warmth from ginger and a touch of Kashmiri red chili (known for its bright color but moderate bite).

  • The Heat: A pleasant tingle that builds slowly but never overwhelms.

  • Classic Dishes: Chicken Tikka Masala, Saag Paneer, or Lamb Rogan Josh.

  • The Profile: Now we’re adding the "kick." This level uses more pungent black pepper and fresh green serrano or Thai chilies to brighten the dish.

  • The Heat: Bold and spirited. You’ll definitely want a side of Naan to help pace yourself.

  • Classic Dishes: Chicken Madras, Beef Bhuna, or spicy Paneer Jalfrezi.

  • The Profile: Inspired by the fiery traditions of Goa and Central India. This involves high concentrations of red chili powder and vinegar to create a sharp, stinging heat.

  • The Heat: Serious business. Expect a brow-sweat and a lingering fire on the palate.

  • Classic Dishes: Lamb Vindaloo or Prawn Ganthia.

  • The Profile: Not for the faint of heart. This level uses the hottest chilies available (like the Naga or Ghost pepper) to create an explosive, volcanic experience.

  • The Heat: For the ultimate "Chili Head." It’s an endurance test of flavor and fire.

The "Fire Extinguisher" Menu

If you’ve bitten off more than you can chew, don't panic! Indian cuisine has built-in remedies:

  • Sweet Lassi: The yogurt base contains casein, which binds with spicy capsaicin to neutralize the burn.

  • Cucumber Raita: A cooling yogurt dip that acts as a reset button for your taste buds.

  • Extra Garlic Naan: The starch helps absorb the spicy oils in the curry.

Chef’s Tip: If you are unsure, we always recommend starting at Medium. We can always add more spice, but it's much harder to take it away!
